Home Cookin #4 ~ Ground Chicken Chili

Welcome Readers! As our weekends draw to a close Sunday is the perfect day to have a peaceful gathering with family around the dinner table.

Every Sunday I will blog about what we are cookin' up in our kitchen along with the recipe!

Today we are cookin' up... Ground Chicken Chili

~ 1 pound ground chicken
~ 1 garlic clove minced
~ 1 can chicken broth
~ 1 can diced tomatoes
~ 2 tablespoons chili powder
~ 1 medium onion- chopped
~ 1/2 to 1 can (6oz) of tomato paste (depending on how much you have to thicken chili)
~ 1 1/2 tablespoons flour
~ 1 tablespoon dried oregano
~ 1 teaspoon salt
~ 1/2 teaspoon pepper
~ 1 seeded jalapeno~ diced
~ 2 cans red kidney beans

How to Cook:
~In a dutch oven over medium heat, brown the ground beef, onion, garlic, and jalapeno until meat is thoroughly cooked.
~Mix together flour and chili powder in a small bowl and then sprinkle the mixture over the meat, and stir until the meat is evenly coated.
~ Stir the oregano into the meat mixture, then pour in the 1 can of chicken broth and diced tomatoes. Season with salt and pepper. Bring to a boil, then add the drained cans of beans.
~ Reduce heat to medium/low, and simmer for 40 minutes to blend flavors.
~ After 40 min add tomato paste to thicken and cook for another 20 minutes until thick!
~ Serve topped with cheddar cheese a scoop of sour cream and corn chips!
