Home Cookin #5~ Cinnamon Pork

Welcome Readers! As our weekends draw to a close Sunday is the perfect day to have a peaceful gathering with family around the dinner table.

Today I will blog about what we are cooked up yesterday (the hubby is at work tonight)but is such a yummy yummy dinner even my picky eater loved!

Today we are cookin' up...

Cinnamon Pork with Onion, Cherry Topping

I used pork tenderloin cut about 1inch thick but you can use chops etc
Cinnamon
Sugar
1/2 white onion, Chopped
A handful of cherries
1/4 cup apple juice
3 tablespoons butter
oil

~First heat your pan over medium heat and add just enough oil to coat the bottom on the pan
~ Mix together equal amount of sugar and cinnamon in a bowl or cup (about 5 Tablespoons worth)
~ Once hot add your pieces of pork
~ On the side facing up sprinkle some of your mixture of cinnamon and sugar (just enough to lightly cover)
~ Cook for 6 minutes then flip
~ Cover this other side with enough cinnamon sugar mix to cover
~ Cook for another 6 minutes or until its no longer pink when cut into
~ Place on plate and cover to keep warm
~ DO NOT RINSE OUT PAN
~ Scrape and cooked mixture off the bottom and leave in pan
~ Place in 3 Tablespoons Butter until melted
~ Add 1/2 onion (Chopped) and simmer for 10 minutes, stirring occasionally (onions should become clear vs white)
~ Then add cherries (smooshed into pan) and apple juice
~ Simmer for another 10 minutes
~ Pour over Pork or serve in a bowl on the side

Serve with homemade bread w/ cinnamon butter, homemade applesauce, roasted apples, or mashed potatoes
